Blueberry Bison Burgers with Goat Cheese

Eating healthy doesn't mean you have to sacrifice taste or flavor. Buffalo is a much lower fat and higher protein meat then beef and the blueberries ensure it maintains a wonderful juiciness. I used low calorie sandwich thins to keep the healthy theme going here. A perfect summer dish for the barbecue.

Ingredients

  • 1 cup balsamic vinegar for reduction
  • ½ c. blueberries mashed
  • ¼ tsp. cinnamon
  • ½ tsp. sugar
  • 1 lb. ground buffalo
  • ½ Tbl. cumin
  • ½ Tbl. coriander
  • ½ Tbl. fresh ground pepper
  • ½ Tbl. kosher salt
  • 4 ½ ounce pieces goat cheese
  • 4 Sandwich Thins
  • ½ cup spinach leaves

Directions

Balsamic Reduction

Heat 1 cup balsamic vinegar in pan over high heat, whisk until reduced by ½. Set aside.

Burgers

Mix blueberries, cinnamon and sugar and add buffalo. Mix together and form into four balls. Make a well in the center of each ball, add goat cheese and form a patty around cheese. Combine cumin, coriander, salt and pepper and sprinkle on patties. Grill on medium heat to desired doneness. Place on healthy sandwich thins. Top with spinach and a drizzle of balsamic reduction. Delicious and healthy.
