When Life Gives You Lemons
Bake, Eat, and Share Lemon Cookies


I learned this recipe from my friend Jeffe (thanks Jeffe!!) when we did a cookie exchange at Christmas. I bit into this cookie and loved it immediately. I have since made them countless times and find it always brings a smile. I have shared the recipe with many and they too have made them to great success.

My good friend's son has had a pretty tough week and I though a batch of these cookies might put a smile on his face - for at least a few minutes.

Since many of my friends have been asking for the recipe lately I thought while I was making them I would give you a step by step recipe. You won't believe how easy these delightful treats are to make.

Lemon Cookies

Ingredients

  • 1 box lemon cake mix
  • 2 1/4 cool whip
  • 1 egg
  • 1 cup confectioners sugar

  • Preheat oven to 350 degrees. In the bowl of a stand mixer combine cake mix, cool whip and egg. (If you don't have a stand mixer it can easily be done with a hand mixer.)
  • Mix until incorporated - about 1 minute. Dough will be very dense and thick.
  • Line cookie sheets with a silpat or parchment paper. Put 1 cup powdered sugar into a bowl. Scoop out small balls of cookie dough, roll into a smooth bowl and coat with powdered sugar. Place on cookie sheet leaving enough room for cookies to spread a bit.
  • Bake for ten minutes. Cookies will be puffy. Allow cookies to cool and deflate.

Variations
  • To enhance the lemon flavor put in a bit of fresh lemon zest.
  • Melt dark chocolate and paint the bottom of the cookies.

I now have lemon cake mix, cool whip, and powdered sugar on hand as pantry staples.

I can whip up a batch of these in only thirty minutes to brighten anyones day. When I found out about my friends son's accident these were whipped up and ready to be shipped in less than an hour.
