Saucy Mama Sweet Heat Eggplant and
Snap Pea Stirfry with Quinoa

Saucy Mama Fab With Five in 15

Quick, Easy, and Delicious!!

Here is my fourth recipe in the Fab with Five in 15 Recipe Series and this one is a winner. It is quick, easy, delicious, and sooooo healthy. Saucy Mama Sweet Heat marinade only has 33 calories per two tablespoons - can you believe that? Quinoa, is considered a great protein source and works great with the vegetables here and with only 1 teaspoon of olive oil you can't lose with this recipe.

Ingredients

  • 1 Cup Quinoa
  • 1 Large Eggplant
  • 2 Medium Shallots
  • Kosher Salt
  • 1 Teaspoon Olive Oil
  • 1/4 Cup + 2 Tablespoons Saucy Mama Sweet Heat Marinade
  • Water
Directions

1. Cut eggplant into chunks and place in large bowl. Generously salt and set aside for about twenty minutes. This will extract some bitter juices from the eggplant. Pour eggplant out onto paper towels and blot dry.

2. Mince Shallots

3. Place quinoa in a large strainer and rinse several times. Don't skip this step - it is important to thouroughly rinse quinoa for the best results. Place rinsed quinoa in saucepan and bring heat to medium high and toast quinoa for a couple of minutes. Mix 1 teaspoon salt in 1 and 3/4 cups wanter. Pour salt water mixture into pan and turn heat to medium. Set timer for twelve minutes. After twelve minutes, if water is absorbed and small white ring has separated from grain then remove from heat and let stand for five minutes. If not, let simmer for up to three more minutes until water is absorbed. After five minutes off heat, fluff with fork.

4. Meanwhile. . .in a large skillet, heat 1 teaspoon of olive oil on medium high. Add shallots to oil and cook until softened - about five minutes. Add eggplant, stir to combine. Add 1/4 cup water and stir and bring to a simmer. Cook until eggplant is nearly softened - about ten minutes. Add 1/4 cup Saucy Mama Sweet Heat Marinade and stir to combine. Add 2 tablespoons water and snap peas and cover and steam for about three minutes until eggplant is completely softened.

5. Add quinoa and 2 tablespoons Saucy Mama Sweet heat Marinade and stir to combine. Yummy!!!!
