Pan Seared Cilantro Lime Shrimp "Tacos" with
Here is my third recipe in the Fab with Five in 15 Recipe Series. When you only have five ingredients to work with it's important to use the ingredients in multiple ways to coax out the maximum flavor. Here, cilantro and lime perform double duty as they act as the marinade for the shrimp and add flavors to the creamy chipotle slaw.
This recipe is so fast that it gives a whole new meaning to the concept of fast food.
Ingredients
- 1 Head of Cabbage
- 3 Tablespoons Fresh Chopped Cilantro
- 2 Limes
- Kosher Salt
- Fresh Ground Pepper
- 1/3 - 1/2 Cup Saucy Mama Creamy Chipotle Dressing
- 1 1/2 Tablespoons Olive Oil
- 1/2 Pound Shrimp Peeled and Deveined (31-40 count)
Directions
(For Step by Step Directions with Pictures See Below)
1. Cut head of cabbage in half. Core both halves. Cut one half into strips and chop fine. Carefully remove the leaves from the second half creating cabbage cups to use as taco shells.
2. In a medium bowl combine chopped cabbage, 2 tablespoons cilantro, juice of one lime and 1/3 cup Saucy Mama Creamy Chipotle Dressing. Season to taste with kosher salt and fresh ground pepper and add more Saucy Mama Dressing if desired.
3.
Heat 1 tablespoon in skillet and heat on medium high heat.
In a small bowl combine shrimp, 1/2 teaspoon kosher salt, fresh ground pepper, 1/2 tablespoon olive oil, juice of 1/2 lime, 1 tablespoon fresh chopped cilantro. Toss to combine.
4. Add shrimp and reduce heat to medium. Cook shrimp on first side for 1 1/2-2 minutes. Turn shrimp and cook for an additional 2 minutes until shrimp is cooked through and well caramelized. Be sure not to overcook shrimp.
5. Add shrimp to creamy chipotle slaw. Toss to combine. Spoon into cabbage taco shells and garnish with fresh lime and cilantro.
