Tarragon Lemon Steaks with Broiled Potatoes
Saucy Mama Fab with Five in 15 Recipe Series
Quick, Easy, and Delicious!!
As part of the Saucy Mama Fab in Five Recipe Contest I have two goals: use all the sauces in at least 1 recipe and make the active time for the recipes no more than fifteen minutes. This is my first recipe in my Fab with Five in 15 recipe series and it was delicious - if I don't say so myself.
I had forgotten just how much I absolutely love tarragon and when I tasted the Tarragon Lemon Mustard from Saucy Mama I knew this is the first sauce I wanted to work with. It was sweet and delicious and cooking with tarragon again put a huge smile on my face.
Ingredients
- 4 Red Potatoes
- 1 teaspoon Kosher Salt (plus additional to taste)
- 1/2 teaspoon Fresh Ground Pepper (plus additional to taste)
- 1 1 Tablespoon Olive Oil
- 2 tablespoons Fresh Tarragon Chopped
- 2 Strip Steaks
- 1/4 cup Saucy Mama Tarragon Lemon Mustard
- 1/4 cup Garlic and Herb Italian Style Bread Crumbs
Directions
(for step by step directions with pictures see below)
1. Pre-heat broiler and cover broiler pan or cooking sheet with tinfoil. Clean potatoes and cut in half lengthwise. Then cut in thirds and into thirds again to create bite size bites. Chop tarragon.
2. In a medium sized microwavable bowl combine potatoes, salt, pepper and 1/2 tablespoon of the fresh tarragon. Cover tightly with plastic wrap and punch a few holes in it with a knife. Microwave for 2 1/2 minutes.
3. Meanwhile - pat steaks dry with paper towel and season with fresh ground pepper on one side. With a pastry brush generously brush with Saucy Mama Tarragon Lemon Mustard on one side only. Sprinkle on bread crumbs and a bit of fresh tarragon and place under the broiler setting a timer for 4 minutes for rare, 5 minutes for medium rare or more depending on what temperature you like your steak cooked (see chart below for broiling times for steaks).
4. Remove potatoes from microwave and stir. Microwave for an additional 2 1/2 minutes. Mix in 2 tablespoons of Tarragon Lemon Mustard to potatoes.
5. Remove steaks from broiler. Remove from foil and discard foil putting a fresh foil sheet down. (this will help the bread crumbs stay crisp instead of getting soggy in steak juices).
6. Return steaks to sheet cooked side down. Season second side with fresh ground pepper, brush with mustard and sprinkle with bread crumbs and fresh tarragon. Spread potatoes in single layer on broiler pan.
7. Return to broiler and cook for an additional 4-5 minutes or more minutes until desired doneness.
8. Remove from broiler and season with salt and fresh ground pepper to taste and garnish with fresh tarragon.
Step by Step Directions with Pictures
How long you cook your steak depends on your preferences and how thick the steak is. This chart assumes a distance of about six inches from the heating element. The best way to test steak doneness is by using an instant read thermometer.
