For the Love of Corn
Part 1 of 3
I love corn - bright, beautiful, delicious corn. With summer around the corner I've been thinking of all the wonderful things to do with corn and wanted to share three of my favorites.
This first dish is easy, quick, and delicious. The spiciness of the chorizo the sweetness of the corn and the freshness of the cilantro combine to make an incredibly flavored dish.
There are only five ingredients:
- 4 ears of corn, husked, tips cut off and milk scraped out
- 1 10 ounce pack Mexican Chorizo
- 1 small to medium onion diced
- Fresh Cilantro chopped
- 1 teaspoon salt plus additional to taste
For this recipe we want a creamy corn. To ensure this cut only the tips of the kernels using the blade of your knife.
Then, use the back of the knife to scrape the milk from the cob. There is so much juicy delicious milk in fresh corn you can create a delicious creamed corn with no milk or cream at all.
Look at all that milk - It does a body good!
In a large skillet over medium high heat, brown the Chorizo for about five minutes.
Add the diced onions and one teaspoon of salt and cook
for an additional five minutes.
Reserve about 2 tablespoons corn to garnish the finished dish. Add in the corn and mix to combine. Cook for an additional five minutes.

Season to taste with salt. Spoon into a serving dish.
Sprinkle with chopped cilantro and reserved corn.
Enjoy!!!
