Such a Wonderful Evening!!

I love to host a holiday party for my friends and was truly inspired when
P♥M Wonderful was recruiting hosts to throw a Pomegranate themed Party. I love a themed party and pomegranates are such a beautiful match to the lovely holiday season. They were only picking 100 hosts across the country so I answered the questions and kept my fingers crossed. A search of the web showed there were many food bloggers who were applying so I doubted my chances, since I was blogless. . .but great news came and I was selected, which gave me the final ounce of motivation to start my own blog. . .so here it is.

The Invitation
I decided early on I wanted this to be a family party, after all who says kids can't enjoy the beauty of pomegranates like the rest of us!!

The Supplies Arrive
One day three gigantic boxes arrived at my door. Inside two of the boxes were the most beautiful pomegranates I had ever seen. Big and heavy - practically popping with their pomegranate juiciness.

I also received pomegranate gift bags for all my guests filled with delightful
P♥M Wonderful items: a beautiful recipe book from the
P♥M Wonderful chef series, a cutting mat with instructions on how to seed a pomegranate; a wonderfully cheeky apron; a pomegranate fun fact sheet, a
P♥M Wonderful bracelet; and coupons for P♥M Wonderful juice. I redeemed all the coupons so I could hand out the bottles to everyone at the party. Plus. . . they are so beautiful they make great decorations. I put them at the gift bag station in the entry way so guests would know from the beginning what fun P♥M Wonderful items they would be taking home.
The Decorations
I knew I wanted the pomegranate theme to permeate the entire night. I went to the farmers market and picked flowers that reminded me of the colors of pomegranates, I found beautiful orchids, lillies, hydrangas, and roses. I was on a mission to find pomegranate branches but they could not be found. I did find some delightful mini pomegranates and some beautiful branches and created the effect I wanted. Of course, the bathroom can't be forgotten. I found some pomegranate mint hand soap and lotion and a wonderful pomegranate candle to round out the atmosphere.
My favorite decoration was definitely the floating pomegranate, pear and orchid arrangement. It got lots of oohs and aahs as guests arrived at the party.

The Guests
Although the P♥M Wonderful pomegranates were great, the best part of the night was bringing together the guests for a memorable evening. Me and a bunch of pomegranates would not have been near as much fun.

The Activities
This party was not just about eating and drinking, there were demonstrations, pomegranate art stations and pomegranate juggling - and not just on the menu.

I might be biased but this was my favorite decorated pomegranate!!
The Demonstrations
Early in the party we showed all the guests just how easy it is to deseed a pomegranate and make some delicious pomegranate clusters that they would be enjoying at the end of the evening. I say "we" because I had two very special helpers for this demonstration. I was watching Iron Chef recently and one of the commentators said it could be difficult to remove the seeds from a pomegranate. They had the fruit on a cutting board and were hacking it to pieces. This method works much better!! See for yourself.
The Menu
Planning this menu was soooooo much fun. I knew I wanted pomegranates in every single course and food that people loved but making it even better with pomegranates. I decided early on the star of the show would be braised lamb shank. I am a bit famous for my braised lamb and the idea of pomegranate braised lamb sounded divine. It was!! Pompagne was an easy decision as were Pomaritas but I wanted something consistent with the latin theme so why not pomegranate salsa. I could talk for ages about the ideas but the final menu came together nicely.

The Party
I knew that at game time I would still have soooo much to do in the kitchen so I made sure each guest was greeted with a glass of Pompagne and the coffee table was set with delish nibbles including pomegranate cherry chutney, pomegranate eggplant relish, a selection of cheeses, salami, and oven roasted rosemary almonds.
In fact, this is one of my standard practices when hosting a party. As long as candles are lit, nibbles are ready, and drinks are waiting, guests will be happy and start mingling with each other.
Recipe for P♥M Wonderful Pompagne
Your favorite champagne or sparkling wine
P♥M Wonderful Pomegranate Syrup
P♥M Wonderful Pomegranate Arils

Add P♥M Wonderful Syrup to Champagne, drop in a few
P♥M Wonderful Pomegranate Arils and Enjoy.

Appetizer Course
Pomaritas and Mini Tostadas with
Shrimp and Pomegranate Mango Salsa
Next up was the appetizer course. The food and drink were both Latin inspired with Pomaritas and mini tostadas with shrimp and pomegranate mango salsa.
My friend Julie whipped up these unique pomaritas so I'm not sure of the exact ratios but here are the ingredients:
Lots of Tequila
Lots of P♥M Wonderful Pomegranate Juice
Key Lime Juice
Amaretto
Fresh Pomegranate Arils
Mix in a pitcher with ice, pour and enjoy!!

The Mini Tostadas
After deveining and cleaning the shrimp I marinated it in equal parts P♥M Wonderful pomegranate mango juice and olive oil.
While the shrimp was marinating, I heated up peanut oil in a deep saute pan and cut out small rounds of flour and corn tortilla. I fried them until crisp then seasoned immediately with cumin and kosher salt. (Thanks Felicia for your help with these!!)
For the salsa, I chopped up one mango, added an equal amount of pomegranate arils, 1/2 diced red onion, 1 serrano chile, 1/2 large jalapeno chile, fresh cilantro and lime juice and mixed to incorporate.
After the shrimp had marinated for about thirty minutes, I cooked it quickly in a hot pan, taking care not to overcook and turning halfway through the cooking time. It only needs about 3-4 minutes.
Assembly was easy, one tortilla crisp, one shrimp, top with pomegranate mango salsa and some fresh chopped cilantro. These went fast!!
Salad Course
For the salad course I candied some walnuts in sugar in a non-stick pan, oven roasted some cherry tomatoes in olive oil, salt and pepper, bought some delicious gorgonzola cheese and whipped up a pomegranate vinaigerette and tossed it all together with some delicious spinach. I was the perfect light dish between the shrimp and the lamb.
Entree
As I mentioned above I am somewhat known for my braised lamb shank. It struck me as the perfect combination with pomegranate juice. I served it over celery root puree and garnished it with beautiful rosemary and pomegranate arils.
First I seasoned the lamb and seared on all sides to give the flavor a jump start. I was making so much lamb I had to do it in two batches.
After removing the lamb I added mirepoix (celery, carrots, and onion) and sauteed the vegetables until soft. I added some minced garlic, a couple of bay leaves, fresh thyme and rosemary and let the flavors meld for a few minutes. Then came the fun part, a cup of P♥M Wonderful pomegranate juice, 1/2 bottle of pinor noir wine, and a couple cups of chicken stock.
I added the lamb back in and added water to cover the lamb. Into the over for four hours at 350 degrees. I removed the lamb, strained the sauce and reduced the sauce with some more P♥M Wonderful pomegranate juice and port wine. After it had reduced by half , I mounted it with butter and the result was a rich yet delicate sauce.
For the celery root puree I simply cut off the rough outer skin of the celery root and cut it into small pieces. Barely covered it with 1/2 milk and 1/2 chicken stock and let it cook until the celery root was fork tender. I drained most of the liquid out and transferred it to the food processor and whipped it to creaminess!! Here it is before I strained it and whipped it.

Desserts
I wanted dessert to be yet another representation of the versatility of these wonderful miracles of natures. Included in the offerings were a Pomegranate Orange Panna Cotta with Pomegranate Syrup and Arils, Frangelico Marinated Pomegranate and Blueberry Fruit Salad in Milk Chocolate Cups with Pomegranate Infused Dulce de Lechee and Pomegranate Dark Chocolate Clusters.
The Party May be Over but the Memories Will Last Forever
